Worcestershire Sauce substitute 1 Tablespoon 1 Tablespoon bottled Steak Sauce
*OR* 1 Tablespoon Soy Sauce
*OR* 1 teaspoon each of Soy Sauce, White Vinegar and Tamarind Paste (if you add just a pinch of ground cloves and a dash of hot pepper sauce you've got a duplication of worcestershire sauce)
Mayonnaise substitute 1 Tablespoon 2 thin slices fresh, ripe Avocado
*OR* 1 Tablespoon Greek Yogurt (yoghurt)
*OR* 1 Tablespoon Plain Yogurt (yoghurt)
Ketchup substitute 1 Cup 1 Cup Tomato Sauce +plus 1 teaspoon Vinegar +plus 1 Tablespoon Sugar
Dijon Mustard substitute 1 Tablespoon 1 Tablespoon Dry Mustard +plus 1 teaspoon Water +plus 1 teaspoon white wine vinegar +plus 1 Tablespoon Mayonnaise +plus a pinch of Salt
Dry Mustard substitute 1 teaspoon 1 Tablespoon Prepared Mustard
Capers Substitute Any Equal amount of Green Oilves
Oyster Sauce substitute Any Vegetarian Stir Fry Sauce
*OR* Soy Sauce to taste

Remember, when making substitutions be sure to measure accurately for best results. Any ingredient substitute may alter slightly the taste, texture, weight, or moisture content of your finished product. Some may alter your recipe more than others, so you need to consider the other ingredients in your recipe whenever making a recipe substitute. Many of the condiment substitutions suggested above will alter the taste of your finished recipe, especially the worcestershire sauce substitute and mayonnaise substitute. For example, egg salad and tuna salad are very different without real mayonnaise.
